Chef de Partie

Deskripsi Pekerjaan :

  1. Prepare in advance food, beverage, material and equipment needed for the service.
  2. Cook and serve dishes according to the restaurant’s menu.
  3. Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.
  4. Clean and re-set their working area.  
  5. In absence of Manager, conduct shift briefings to ensure hotel activities and operational requirements are known. 
  6. Work with Superior and People Services Manager to ensure the departmental performance of staff is productive. 
  7. Conduct on the job training in accordance with the departmental standards and procedures and maintain a record of progress for each staff member.
  8. Provide input for probation and formal performance appraisal discussions in line with company guideline. 
  9. Ensure new staff attends Corporate Orientation within first month of hire and departmental orientation is completed within first two weeks.
  10. Coach, counsel and discipline staff in breach of hotel policies and departmental procedures, providing constructive feedback to enhance performance.
  11. Work with superior in the preparation and management of the department’s budget and be aware of financial targets.
  12. Recycle where-ever possible and enforce cost saving measures to staff.
  13. Log security incidents and accidents in accordance with hotel requirements.
  14. Communicate to their superior any difficulties, guest or internal customer comment on and other relevant information.
  15. Additional responsibilities and tasks can be added at any time according to the needs of the business and of the hotel. 

Sushi Chef

Deskripsi Pekerjaan :

  1. Prepare in advance food, beverage, material and equipment needed for the service.
  2. Cook and serve dishes according to the restaurant’s menu and set directions by the Executive Sous Chef and Executive Chef.
  3. Support other kitchen posts where required
  4. Preparation of mis en place for a la carte-, Room Service- and Bar menu.
  5. Check, storage and processing of existing and newly delivered food items.
  6. Support the Sous Chefs and Executive Chef with the food orders.
  7. Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.
  8. Clean and re-set their working area.
  9. Knowledge of products and awareness of related costs.
  10. Daily surveillance and warranty of immaculately cleanliness and hygiene in entire kitchen area.
  11. Wearing immaculate and clean Uniform according to corporate grooming standards.
  12. Compliance of respective policies & procedures
  13. Control condition of all technical and general work equipment
  14. Participation on Culinary Team Meetings
  15. Result oriented relationship with all Restaurant Outlets, Stewarding, Purchasing, Human Resources etc.
  16. Compliance of work security
  17. Commitment to personal and specialized further education in relevant areas

Demi Chef de Partie – Japanese Outlet

Deskripsi Pekerjaan :

  1. In absence of Manager, conduct shift briefings to ensure hotel activities and operational requirements are known. 
  2. Prepare in advance food, beverage, material and equipment needed for the service. Cook and serve dishes according to the restaurant’s menu.
  3. Provide direction to the Kitchen helpers, including Commis, Cooks, Kitchen Attendants and Stewards.
  4. Clean and re-set their working area.  
  5. Work with Superior and People Services Manager to ensure the departmental performance of staff is productive. Duties include:
  6. Conducting on the job training in accordance with the departmental standards and procedures and maintaining a record of progress for each staff member.
  7. Providing input for probation and formal performance appraisal discussions in line with company guideline.
